"Turkish food is not complicated cooking, it is about getting simple cooking absolutely right," say Selin Rozanes and Ayben Kokum, the ladies who run Turkish Flavours, a culinary travel company in Istanbul.

In my experience, this is indeed the innermost secret of savory Turkish cuisine.

Selin Hanim teaches half-day cooking courses Monday and Thursday in her home kitchen, and also on Thursday a professional chef gives a lesson at a nearby cooking school (10 am to 1 pm, followed—of course—by...lunch!) More...

For an extended introduction to Turkish cuisine and markets, sign up for Turkish Flavours' 6-day culinary tour of Istanbul. Here are the highlights of the tour:

Day 1
Turkish Flavours staff meets you at the airport, escorts you to your hotel, offers a welcome drink and a chat with gourmet experts in Turkish cuisine who give you restaurant suggestions for this evening's dinner (on your own).

Day 2
After a morning orientation sightseeing tour of Istanbul, you participate in your first Turkish cooking lesson: preparing lunch, which you then get to enjoy! After lunch you go on a food-lovers' wandering tour through local markets with stops for tastings of artisanal food and wine.

Day 3
The day starts at Istanbul's famous Egyptian (Spice) Bazaar, with elaborate displays of herbs, spices, dried fruits, nuts and other snacks and ingredients. We then go to one of the city's most famous baklava shops to watch the masters produce this favorite Turkish sweet. Lunch is in a restaurant overlooking the Golden Horn. In the afternoon it's back to the kitchen for another cooking lesson followed by tea, coffee and goodies.

Day  4
Your instruction in the art and craft of Turkish cuisine continues with a morning cooking lesson, followed by lunch with a Turkish cookbook author.
In the afternoon we drive north along the shores of the Bosphorus, then board a traditional Istanbul ferryboat for a scenic Bosphorus cruise south back to Istanbul.

Day 5
Today we take in all of Istanbul on a full-day sightseeing tour, including Ayasofya, Blue Mosque, Byzantine Hippodrome, Grand Bazaar, and of course Topkapi, the sultans' sumptuous palace, where we also take our lunch at the palace's renowned Konyali Restaurant. In the evening, we compare notes, memories and tastes at a Farewell Dinner at one of Istanbul's best restaurants.

Day 6
We escort you to the airport for your flight home (or you can extend your stay in Turkey, as you wish). As a souvenir, we present you with a cookbook containing some of the best recipes for Turkish dishes.

This culinary tour of Istanbul is offered on specific dates throughout the year.

(Note: hotel accommodations and daily breakfast are not included in the tour, so you can choose whichever hotel you prefer. Turkish Flavours will be happy to help with suggestions, and making arrangements, if you like.)

Contact Turkish Flavours to reserve your place on their Turkish cuisine program. When you do, be sure to mention TTP. Here's why.
